There are so many benefits to living in the country and I’m honestly thankful to have ended up in such a beautiful area. Don‘t get me wrong, I love cities and city life and I thoroughly enjoyed my time in London and then Milan.
But even while living in the city, I longed for a more natural lifestyle. Being able to step out of your house and be surrounded by trees and fields is something I don’t think I’ll ever take for granted.
However, there are some negatives to living in a quieter part of the world and I discovered one of them just this week. Without sounding too dramatic or middle class or just flakey, I haven’t been able to buy Tahini!!!
I know, it’s not the end of the world, but since I’ve stopped eating bread and hugely cut down on pasta and processed carbs, I take great pleasure in making and eating humus. So when I couldn’t get any Tahini from any of the three supermarkets I went to, I started to have a mini panic!
This morning I decided to have a go making it myself. I expected it to contain some magic ingredients but how wrong I was! Sesame seeds, oil, and salt!
It took me about 20 minutes from start to finish and it was so simple. I did roast half the seeds in a pan and I used the coffee grinder to make them into a paste. I used olive oil and a little salt. I know it sounds paranoid but I do believe that the more we can produce ourselves without additives, the healthier we‘re going to be. And it was fun!!! 😊
I’ve included the recipe for Tahini and Humus below. Enjoy 💚💚💚
