Fool for You



It’s that time of year again. The roses have faded, the garden is a splash of yellows and blues, and my neighbor, Jiřina, has bushes full of Gooseberries and Red Currents and after using what she needs, there’s plenty left and she’s happy for me to come and pick what I want.




I’d love to say I make jam and preserves but I just don’t. I’m a cream addict and I’m tempted by anything that involves cream! So here is the overlap: my love of cream with an abundance of gorgeous fruits… fool!!!




Of course there are other delicious desserts within that overlap other than Fool, like Crème Brûlée, Pana Cotta, Trifle, etc. any of these are my kind of thing. I like wet desserts and if there’s cream involved, even better. But fool is something I like as it doesn’t have to be too sweet, and it isn’t heavy like cake. It’s a perfect summer dessert.



I made a Gooseberry Fool a couple of years ago which was delicious but like anything, I ended up tweaking the recipe a little.



My mother and I scoured the internet for a Fool that contains both Red Currents and Gooseberry but we couldn’t find anything that looked good or contained the ingredients we had in the house. So we’ve kind of made up our own and it turned out remarkably well.




So we’re sharing it here and you can let me know if you made any other alterations or improvements to the recipe… or maybe you chose different fruit… either way, I hope you enjoy it!



Ingredients:


💚 400 grams of Red Currents and Gooseberries topped and tailed.


💚 250 ml of whipped cream


💚 250 ml of Greek Yogurt


💚 2 tablespoons of icing sugar


💚 3 tablespoons of caster sugar


💚 1 teaspoon of vanilla extract


Method:


♥️ Put the fruit into a saucepan with the caster sugar and slowly simmer until it’s all broken down into a pulp. Then let cool.


♥️ Whisk the cream until thick. Then whisk the yogurt, vanilla extract, and icing sugar, and then add the whipped cream whisking it all together.


♥️ Add the cooled fruit mixture stirring it in with a metal spoon until completely blended.


♥️ Spoon into glasses, cool in the fridge, and decorate with some of your fruit.


I found this really delicious. It was tart enough and has enough flavor but wasn’t too sweet. Give it a try! I’m sure it would also be lovely with other fruits 💜
